Day 16: Ultimate Challenge – Guest Post by O Laing from Have You Had Your Big Bamboo
I am so desperate to keep home close to my heart throughout my new adventures in the South. Feeling a little depressed and nostalgic I located Compare Foods a local supermarket that sells most of the Caribbean ingredients that I use to cook. I made as close to a traditional Jamaican breakfast like Moms use to make.
In Jamaica we would use callaloo but sometimes it’s out of season or just hard to find in most areas. Plus I doe like tin callaloo, it too tough! So I will be substituting spinach in its place.
To make life easy I will post shortcuts:
Ingredients & How To:
Cod Fish:
2 bags Boned Cod Fish Fillets (shortcut: yu really nuh wan deal wid di bone dem)
You can soak fish in water overnight or boil your cod fish in water to lessen the amount of saltiness.
Plantains:
3 Ripe Plantains peeled and sliced circular or on a diagonal fry until golden brown on both sides
Dumplings:
3 cups Aunt Jemima flour (shortcut: wid dis yah flour yu nafi add a thing) except
1/2 cup salt water (1 tablespoon salt)
Blend salt with warm water add to flour until you arrive at a doughy consistency create circular balls and fry in olive or soybean oil until golden brown on all sides and the middle is not doughy. (Shortcut: deep fry to cook evenly an ave perfect ball shape dumplin)
As Moms used to say “before good food waste meek belly bussssss”! Now sit enjoy…….and burp!
