Thereâ€™s nothing like planning a fun Sunday Brunch for some of your favorite people. We were able to reconnect and had amazing conversations that brought a few of us to tears. These are some of the BEST moments. The staple menu item for brunch was avocados and there were some great recipes to create. I chose to make the avocado and coconut ice pops and vegan avocado chocolate chia pudding. All the recipes looked amazing but, this North Carolina summer heat called for some dessert to cool us off. Itâ€™s HOT!!!!!
My guests were greeted with Mimosas, information handouts, recipe cards and the cutest T-Shirts. I spoke about the avocado and coconut ice pops that I had prepared the previous evening and how easy it was to make. My ice tray that I used makes eight, so there were eight large coconut avocado ice pops. I opted to make the vegan avocado chocolate chia pudding on site. We thought it would be fun to prepare and set it in the refrigerator to cool while we talked about everything under the sun. We even shared our favorite ways to eat avocado! Iâ€™ve been missing out! Iâ€™ve NEVER had avocado on a burger!

Avocados contain naturally good monounsaturated fat and are cholesterol free. Naturally good fats are an important part of a healthy diet. Iâ€™ve always tried to maintain a healthy diet and itâ€™s easy when you have fruits like avocado that tastes good to make your healthy lifestyle a little bit easier. I drink a lot of smoothies and I just love a good avocado smoothie. I try to start my mornings out with a smoothie in lieu of a real â€œbreakfastâ€. Itâ€™s bad but, I normally skip the first meal of the day. Itâ€™s either a smoothie or herbal tea.
I learned so much about avocados while prepping for my brunch. I never really understood the stages of ripening until I had to shop for a perfectly ripe avocado. Avocados are healthy and can support weight loss/ management goals because they are a good source of fiber and contain good fats. It can also be used as a recipe substitute for bad fats and as an alternative to dairy products. Fresh avocados are naturally good fats and cholesterol free.
