We are just about an entire month into the New Year and I can only speak for myself when I say that I made a promise to myself to eat better. I am looking at incorporating the different food groups into my diet for each meal. I am probably a C+ with the foods in my pantry and refrigerator. I’m trying to at least take my grade up to a B+. I have food allergies and that can be somewhat of a barrier when I am trying to prepare meals. I always change the recipe to make it my own with the ingredients I can tolerate.
Quick Meal Planning has always been a priority for me because I have a full schedule. My four children constantly have me ripping and running behind them, homeschooling the youngest and running my businesses keep me pretty busy. There are days that I am out later than others and I don’t like preparing dinner after a certain time. Asian Chicken Salad was very easy to prepare. I used a few basic ingredients to create this salad in addition to the Sanderson Farms Thinly Sliced Boneless Skinless Breast Fillets. I had 100% Organic Spring Mix, Seasoned Croutons and Mandarin Oranges. I decided to pan fry the thinly sliced boneless chicken breast fillets. Then I sliced them up to go into the salad. It took me less than thirty minutes to prepare this dinner salad. Once I finished cooking the chicken I added the other ingredients and drizzled sesame ginger salad dressing on top. It was delicious!
