It’s almost midnight and I have food on my brain…
I love to cook! I love to host dinner parties and I usually have Thanksgiving & Christmas Dinner at my home if we don’t travel. I find reasons to host events at my home. Coming from a Jamaican family I was brought up learning how to prepare Jamaican Cuisine. I also should mention that my grandmother was Jamasian (Jamaican & Asian) So I was taught to cook certain Chinese dishes as well. Before I married my husband his mother taught me to prepare all all his favorite dishes mostly Southern Style Cooking. Can you believe it! I couldn’t make macaroni & cheese from scratch or fry chicken. If I had mac and cheese it was Kraft and the chicken was Kentucky Fried. Now I’m a Master Chef! I guess that comes in handy when you have a husband and four children to feed. I must say I love Italian food and I consume way too much pasta, but am a sucker for any Caribbean Inspired dish with all those exotic spices and flavors.
Which brings me to tonight’s Recipe, I came across this recipe at work in the newspaper and had to share because my mouth started to water looking at the picture of the dish and reading the ingredients and how to prepare it. I must add that I am going to give you exact instructions. I myself don’t follow directions when cooking. I do everything to taste…
